Our team members consist of both experienced chef's from Ontario, Canada and also new talent and culinary students from various institutions, universities and colleges.

About The Founder
Damien Defranco is an executive chef, restaurateur, and serial entrepreneur whose passion for food and flavor has taken him in and out of China, Hong Kong, and other countries, exploring diverse culinary traditions and refining his craft along the way. During this time, he founded and operated two successful restaurants in China, sharing his vision of exquisite, flavorful dining with a broad audience. Beyond his kitchens, Damien has also founded dozens of other companies globally around the world.
Returning to Canada, Damien brought his global experiences home, opening a Chinese/Japanese fusion restaurant in London, Ontario, where he combines worldly techniques with the comforting, nostalgic flavors of home-style, westernized cuisine. His approach focuses on creating meals that are rich in flavor, deeply satisfying, and evocative of the warmth of home, whether it’s a hearty family-style dish or a delicate, elevated creation designed to delight the senses. Each dish is crafted to celebrate flavour as the centerpiece of the experience, bringing people together over shared enjoyment and connection.

As an educator and leader, he has shared his culinary knowledge with students, staff, and enthusiasts worldwide, authored several cookbooks, and contributed extensively as a content creator and writer, inspiring others to appreciate the depth, creativity, and bold flavors of the culinary arts. Damien’s philosophy is simple yet profound: nothing brings people together more than food.
